Choline is a water-soluble trace mineral related to other vitamins like group B. Like group B vitamins, choline stimulates the metabolism process of nutrients like carbohydrates, proteins and fats for energy. The transport of fats, both cholesterol and triglycerides, from the liver to the body's cells also requires choline and is necessary to prevent the accumulation of fat in the liver.

Choline is one of the structural components of fat and therefore can be found in foods that naturally contain fats such as liver, fatty fish, legumes and beef.
