Everyone loves cheesecake! Here is a delicious raw recipe packed with plant based polyphenols and good fats to assist your brain function and mood.
Ingredients
- 2 Tbsp Cacao powder
- 2 Tbsp Ārepa Nootropic Powder
- 1/2 cup dates
- 1/4 cup almond milk or coconut milk
- 1.5 Tbsp maple syrup
- 1/2 tsp vanilla extract
- 4 Tbsp coconut oil
- 3/4 cup almonds
- 1 cup cashew nuts (raw) soaked for 3 hours
Method
Place 3/4 cup of almonds, half a cup of dates, 1 Tbsp of cacao powder, 1 Tbsp of melted coconut oil and a pinch of salt in a blender and blitz until it is fine. It should be a quite sticky.
Place around 1 Tbsp of the base mixture into the bottom of a mini silicone muffin tray.
Press the base down firmly with your fingers then pop in the freezer to set while you make the filling.
To make the filling drain the water from the cashew nuts and pop into the clean blender with 1/4 cup of almond milk (or coconut milk), 1.5 Tbsp of maple syrup, 3 Tbsp of melted coconut oil, 2 Tbsp of Arepa Nootropic powder and 1/2 tsp of vanilla extract.
Blitz in the blender until the mixture becomes creamy. This can take up to 10 minutes blending. Taste mixture and add extra vanilla and maple syrup if you like it sweeter.
Once you are happy with the texture, remove the bases from the freezer and place a large heaped Tbsp of the filling on top of the bases.
Place back in the freezer and leave for about half an hour to set. Remove from the freezer and leave for 5 minutes to soften before eating.
